Bread is symbolic through out scripture. God didn't need to see Ezekiel's logic when asked to bake pure shew bread and then defile it by cooking it over impure fire. He was called upon to be merciful and so He was even so that the whole of Israel wouldn't suffer the ultimate defilement of their (scripture) though they would partake of ruin and disgrace in the false doctrine (defiled scripture). The children of Israel ate their defiled (false doctrine) bread (word of God) from the time they departed from Judah, until 390 years ped; the 390 years ended when Cyrus overthrew Babylon. Though there were still Jews who accepted Christ for a time the "Holy City" would become a gift to the Gentiles so that they might have access to pure scripture and salvation. Animals are also symbolic of pagan worship so animal dung would have been more appropriate anyway though the Greeks and Romans often idolized and worshiped men as gods.
